Oaks Mackay Rivermarque Hotel are currently looking for enthusiastic, professional and hands-on Casual Food and Beverage Attendants to join us.

You will support the overall Food & Beverage operation of the resort to maximize guest satisfaction, team member performance and business results. Your key duties and responsibilities are to promote and ensure guest satisfaction, maintain a safe and sanitary work environment and ensure only the highest quality products are being served, achieved through developing and maintaining a strong team environment, delivery of prompt, courteous service in accordance with brand and Food & Beverage standards. Further you handle daily team member relations, and encourage problem solving by team members through proper training and empowerment.

 A Chef de Partie is responsible for the oversight of all culinary dishes that are prepared in their section. Because of this, a successful Chef de Partie must be very knowledgeable about their specialty, as well as culinary functions in general. A person in this role must also be very organized and comfortable working in a high-pressure environment. A Chef de Partie must also be able to give orders within their section, as well as reliably carry out orders handed down to them by the Sous Chef and Head Chef.

As Waiter/Waitress you need to ensure the effective delivery of in-room dining services to guests of the hotel. Your key duties and responsibilities will be to ensure that the in-room dining service is delivered in line with the brand service standards, that orders are delivered on time having been thoroughly checked, and that tray clearanceis done quickly. Additionally you will be required to fully participate in departmental training sessions to improve personal skills and service levels, interact with guests in an upbeat and friendly manner in order to maximize satisfaction, and capitalize on the returns to the hotel.

As the Italian Specialty Chef, you will be completely responsible for directing, training, supervising, planning, and coordinating all areas within the culinary department, including any projects requested by the Hotel Manager, Director of F&B, or Executive Chef. You should be comfortable in leading and managing the kitchen team and will provide support and training on an ongoing basis. It will be your responsibility to ensure only the highest quality of food & beverage for our guests through meticulous consistency, taste, and presentation of all dishes.

Additionally, you will monitor the food inventory on a monthly basis, maintaining proper control of orders and purchases and ensuring that all deliveries are received and handled efficiently and in line with hotel standards. You will review the food cost analysis on a daily basis to ensure that it is in line with the budget, with the goal of securing profit margins while maintaining the Corporate image of the Company at all times. You will also oversee the cleanliness and hygiene of all kitchen spaces and procedures.

You will maintain the team member performance and development at the superior level – grooming ‘good’ to ‘great’ and achieve the targeted team member satisfaction. You will work closely with the sales & catering, marketing and banquet teams to maximize the business results.

You will assist the Food & Beverage Manager, driving the Food & Beverage team in all aspects, from business planning and organizing to operations and administration. Like all members of the kitchen team, the Commis Chef must maintain high standards of health and safety, including personal hygiene. You will be responsible for producing the most creative and excellent dishes, ensuring that the guests expectations are exceeded and fully satisfied. The person in this position must be able to effectively communicate with other members of the kitchen team, this includes being able to gracefully receive constructive criticism as well as effectively carry out orders. Additionally, a Commis Chef also needs to be able to remain calm while multi-tasking, as they are often called upon to carry out many different orders simultaneously in a brief amount of time. The Commis Chef is a part of the kitchen team, and as such must be able and willing to perform the basic tasks of food preparation and organization in the kitchen. This ability to create excellence in your own area of responsibility and to support others as they do the same is vital to the successful operation of the kitchen and to ensure the enjoyment of guests.

We require a dynamic and experienced Food and Beverage Manager to lead our Food and Beverage team on a full-time basis at our stunning Oaks Port Douglas Resort. 

As the Food and Beverage Manager you will: 

• Ensure smooth and efficient daily floor operations of the restaurant and bar
• Managing the day-to-day profitability, presentation and operation of the restaurant and bar
• Develop and maintain a strong understanding of the company's food and beverage features to promote to clients
• Managing, leading and motivating staff to ensure a high preforming team culture is maintained
• Work closely with the General Manager and marketing department to develop marketing material and promotions for the Food and Beverage department
